spinach salad with strawberries, feta, + almonds

This salad is a riff on one that I have seen many, many times and have also eaten a version of from Whole Foods. I love that it is so very quick and easy to throw together, yet still packs a good nutritional punch with the spinach, strawberries, and almonds. I like to toss this together for lunch with some left-over grilled chicken.

spinach salad with strawberries, feta, + almonds

{use quantities of veggies/fruit/cheese to accommodate your taste preference and the number of servings you wish to make}

  • organic baby spinach
  • organic strawberries, sliced
  • organic feta, crumbled
  • sliced almonds
  • grilled organic chicken, optional
  • white wine honey vinaigrette {see recipe below}, or dressing of your choice; this poppy seed one might be good too
Toss salad ingredients together in desired quantities and proportions (I love lots of almonds!).

white wine honey vinaigrette
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 tablespoon honey
  • salt and pepper to taste
Whisk salad dressing ingredients together.
