recipes on my mind

Happy 11/11/11!!! Woo-hoo! And Happy Friday, too! Although I am traveling quite a bit again this month (I am on my way to Phoenix today), I am loving cooking at home this November ... warm, yummy, healthy foods ...

And oh goodness, there are always so many recipes on my mind ... too many recipes to try and so many old favorites! Here is a combination of two new recipes I want to try (the quiche and the pumpkin bread) and two recipes that are tried-and-true-gotta-love-them (the chicken tacos and the overnight oats).



A couple of quick notes...
  • all of these are nice and easy! the quiche is the most complicated, and I plan on using a pre-made crust from my local baker instead of making the crust from scratch.
  • For the chicken tacos, I forgo the chipotles and don't even miss them and I think D.L. Jardine's Cowpoke Artichoke Salsa is super tasty for this recipe! The recipe calls for a 1/2 cup of salsa, but I use almost the whole jar. Also, I serve these in soft corn tortillas (preferably the fresh made ones from Whole Foods, when I can bring a batch home from a Denver trip) with black olives and goat's milk feta cheese sprinkled on top.
